This smoothie became such because we ran out of acai in our house - I know right - but it wasn't because we forgot to stock up. The Cairns distributor ran out for a few days. So that's awesome! B and I are working out magic and painting the town purple (berry)! And as a result this delicious brekkie smoothie was created.

Wanting to make something meaty enough for brekkie without feeling the hunger pangs creep back an hour later, I made sure there was a good amount of protein and fats, as well as other goodies for nutrition and flavour sake. I hope you like it!

What you'll need:

1 frozen banana
1 cup frozen blueberries
1/2 cup cashews
2 cups almond milk
1/4 cup dessicated coconut
1/4 tsp cinnamon
1/4 tsp vanilla powder
1 Tbsp almond butter
1 Tbsp coconut nectar

Blend til super smooth. Top with flaked coconut and extra blueberries. Serves 2.

Blueberries : : antioxidants - fibre
Cashews : : protein - monounsaturated fats
Cinnamon : : stabilises blood sugar - antioxidant
Coconut nectar : : low glycemic index - mineral rich

Whip this up before running out the door, or put your feet up and really enjoy sipping this with your buddy and a good magazine.
