NOURISH: A WINNING CHICKEN RECIPE

For now I want to sahre a super quick recipe I created last week coz it was just so darn amazing!
We got organic chicken from Wholefoods and with a few other bits and peices in the fridge, I whipped this up whilst we had a movie on in our apartment. You're gonna love it!


What you'll need:


2 chicken legs (leg + thigh)
1 brown onion
Handful cherry tomatoes
Dried herbs (we've got a Chimichurri mix)
Coconut oil
1 Head of broccoli
 
 
// Preheat your oven to 400 degress farenheit (about 200 degress in Oz)

// Generously sprinkle the dried herbs all over chicken pieces coating well

// Heat up a fry pan and add a tablespoon or two of coconut oil. Add the chicken and cook til browned on both sides (this may take 15-20 mins; don't be shy of using more coconut oil if you need it. It totally adds to the flavours and juiciness later on)

// Meanwhile, chop cherry tomatoes in half and add to a baking dish

// Once chicken is brown, add it to the baking dish with all pan juices and pop into the oven

// Now fry your chopped or sliced onion in the same frypan with extra oil if need be. You want these babies translucent, soft and almost brown. Once they're there, open the oven and chuck them right ontop of your chicken

// Now set your timer for 30 minutes and check - you may need another 10 mins. When it's almonst ready, steam up some broccoli to go on the side and voila!



This sounds so simple that perhaps also boring but take my word for this... if you're using organic ingredients, this is the bomb!
