NOURISH: CREAMY QUINOA PORRIDGE

Most of us are familiar with quinoa these days as it's been touted far and wide as an alternative to rice for those who want to follow a grain free diet, as quinoa – pronounced keen-wa – is actually a South American seed, even though it cooks and tastes just like a grain; which is why it is so popular in paleo, gluten free and vegan lifestyles.

Weekend Recipe - Quinoa Porridge

It's Friday and the time of the week when I like to get my thinking cap on as to what goodies I can get into creating in my kitchen over the weekend. I've got a few ideas, but this one is super easy and sounds delicious, so why don't you make it with me too and we can talk about it on the Eat.More.Plants Facebook page here in the next few days?

I've pinched this recipe from the beautiful Lee over at Supercharged Food as I was hoping to find her oven-roasted cauliflower that I made during the week (sensational!), but that recipe is not online so I'll have to grab it from my book with my photos and get that to you all another time. Most ingredients here you may already have in your kitchen, but if not, there's minimal to buy.

Quinoa Porridge

Serves 2
  • 1 cup quinoa
  • 1/2 tsp sea salt
  • 1 tsp cinnamon
  • 8 drops stevia liquid concentrate
  • 1 TBS coconut oil or butter (if tolerated)
  • Almond milk to serve
Bring 2 cups of water to boil in a wide saucepan
Add quinoa, sea salt, cinnamon, stevia and butter/coconut oil
Cover and reduce heat and simmer for 12 minutes
Remove from heat and scoop into a bowl add almond milk and enjoy

Those berries ontop there look delicious but as I'm currently doing the I Quit Sugar thang to see if my health imrpoves, there'll be none of that for me! Maybe some activated walnuts or a teaspoon of ghee.

Keen-Wah what??

Detox DAY 10 and feeling GREAT!

Just a quick check in and another delicious brekkie I had at work this morning -

Quinoa (soaked for a day and a half)
Chia seeds (soaked for 10 minutes or so)
Dried figs (3 of these, soaked overnight)
Almonds (few of these babies soaked overnight also)
Banana (fresh and sliced)
Flaxmeal (sprinkled ontop)

If you've never heard of QUINOA (pronounced KEEN-WAH) check it out here. If you;ve never eaten it before, you're sure missing out. Quinoa is actually the seed from a plant that is closely related to leafy green vegetables such as spinach and beets. A nutritional POWERHOUSE it is incredibly high in PROTEIN, as well as iron, calcium and magnesium. It's got a beautiful nutty taste and goes well with either sweet or savoury.
