Lazy Saturday In

Wanna whip up something SCRUMPTIOUS and quick?

Last night Borck and I opted for a lazy night in having both worked long weeks, all we wanted to do was put our feet up and watch a DVD on the couch.

So before we both raced off (again) for our days full of errands, more work, gym sessions, sunbaking, voting and more, I sliced and diced a bunch of vegies and made a super fast-easy-peasy-lasagna.

I wasn't going by any recipes so I used eggplant (that admittedley had been marinating for a couple of days in the fridge), zucchinis, red capsicum, and tomatoes. Then in the blender I threw in a few tomatoes, a bunch of basil, one MASSIVE russian garlic clove, a bit less than one onion, and some chilli. That was my sauce.

I love the thought of eating RAW garlic (think anti-fungal, anti-viral, anti-bacterial) and RAW onion (think beautifying-rich SULPHUR) but unless it's thrown into a yummolicious sauce (that both you and your partner will eat together hehe) it's a little tricky to get it down.

Then I layered it all in a large dish and added some nutritional yeast flakes for a tasty cheesy addition - and a pack of B vitamins. I'm not so much a fan of the heavy nut-based raw cheeses that could go with a lasagna, so usually opt for the lighter easy-peasy-vegie one instead.


It was so good coming home knowing dinner was waiting for us both after 2hrs at the gym that was SO GOOD yet tiring.
The avocado ontop soothed the buzzing chilli hit in the sauce, and with a great big side of english spinach, it really hit the spot on the couch curled up with a DVD.




But no lazy Saturday night is complete without dessert...


Frozen bananas in the blender, then a quick choccie sauce of cacao, coconut oil and agave that when poured ontop turns into ICE MAGIC... sprinkled with coconut flakes, sliced bananas, cacao nibs and AMAZING Loving Earth coconut-ginger-cinnamon-activated-walnuts. YUM!

When you think the fridge is empty.

The past two days our fridge has been almost empty of FRESH VEGGIES for lunches and dinners… yet I have some how managed to come up with some damn tasty meals much to my surprise!

Ingredient numero uno - Cabbage.
Enough said for some. Not for me. I LOVE the stuff. Red. Green. Chinese. Savoy. It's cheap, always available, and the combinations I can create with it are ENDLESS making it PERFECT for when you think there's nothing in the fridge. ADD ANYTHING TO IT!

For lunch the other day I chopped CARROTS, RED ONIONS and PARSLEY. Added a dressing of olive oil, apple cider vinegar, maybe a bit of agave too I dont remember. Salt. Pepper. Voila.


Cabbage is a BEAUTY FOOD so rich in sulphur. I feel BEAUTIFUL eating it.

Then lunch today... After a morning of shopping with mum I came home with a very healthy appetite. But with minimal ingredients???
I’ve always got GREENS so usually start with that – and I had ZUCCHINI so decided to grate it instead of my usual quick slicing job. I found a BEETROOT in the drawer and thought I’d do the same. A bit of AVO, drizzle of cold pressed olive oil. Presto! Alongside a piece of my raw bread that lasts forever in my fridge so I've always got some... A very fine juicy colourful Sunday lunch!


Then dinner.
What to eat when mum was cooking a roast! I'd usually try my hand at something along the same lines only RAW-STYLE, but coming home from the gym at 6pm I wasn’t feeling all that adventurous with the little bit of time I had to prep my meal, so again I had the GREENS… got some finely sliced strips of ZUCCHINI (love the stuff of late), some tasty PUMPKIN mum had got for her roast… TUMERIC and olive oil. Easy. Tasty.


And to top it all off… there's always frozen fruit in my freezer so I threw BANANAS and BLUEBERRIES in the blender with some carob, lecithin and a drizzle of agave. Delish!



So with what I thought was a fridge full of not alot - I surprised myself!

Create Love In The Kitchen

I've been in the kitchen alot in recent weeks HAVING A BALL trying new recipes, creating my own, making huge salads, dips, sweets and even brekkie cereal. Playing with it all gives me my time to get cREatiVE, centre myself, ESCAPE, eXpLoRe, muCK around, and most importantly HAVE FUN! Here's a bunch of my Art Works, and one amazing recipe for you to try.


Sunflower Seed Pate with crudites

1 cup soaked sunflower seeds (at least 4hrs soaking time)
1 small red chilli
1 clove of garlic
3 tbs fresh lime juice
Less than 1/4 red onion - that's all I had and it worked really well
1/2 cup coriander

Blend really well until smooth (my blender blade is in need of replacement so this time my pate had a little more texture to it). AMAZING!!!



Italian pizza topped with spinach, tomatoes, sweet juicy corn, olives (not raw), mushies, zucchini spread and tomato salsa. Buonappetito!


Banana Sundae - banana sorbet, banana/maca/cacao sorbet, choc-coconut fudge and crunchy walnuts. Drool!


Apple Granola - almonds, sunflower seeds, buckwheat, apples, dates, goji berries, coconut, maple syrup (not 100% raw but I was out of agave syrup), and cinnamon...

A different granola recipe I wanted to try - buckwheat, flaxseeds, pumpkin seeds, sunflower seeds, almonds, walnuts, dates, apple, cinnamon, sultanas...


... after dehydrating and ready to eat!! Crunchy bite sized morsels of goodness!!


Dessert at Dads one night - nectarines, strawberries, blueberries, mango, watermelon, grapes, pineapple, passionfruit... I ate 90% of the platter I think!


Easy lunch one rainy day; raw guac, tomato curry salsa, zucchini homo, and a cheesey-red-capsicum-chia-chilli dressing/salsa/sauce with my bok choy


My Mexican Inspired Salad - greens, red capsicum, corn, coriander, avocado, lime juice, chilli flakes


Co's Super Super Balls - I call them this as my nick name has been C-o for a few years now and these babies are PACKED FULL of super super goodness!! I mixed ground raw organic goji berries, ground sunflower seeds, raw organic cacao, raw organic coconut oil, chia seeds, coconut, vanilla bean, lucuma and water and they went down a treat!


Asian Kelp Noodle "Stir Fry" - capsicum, carrot, greens, kelp and a marinade of which I cant remember... lemon or lime, sesame oil, maybe garlic? maybe tamari? most probably some chilli...
If you've never had or heard of kelp before - you're in for a real treat! Kelp noodles are simply raw kelp and water, in the form of a soft noodle. RAW NOODLES? You bet! They are low in carbs and calories, contain NO fat or gluten! They have a really neutral flavour which makes them easy to work into any dish - soup, salad, un-stir fry, or as pasta with any sauce or topping, and are always in my pantry!
