Coz Ur Worth It
Happy Monday chikadees! And what a great Monday it has been - Ok I'll admit it's been a teeny bit stressful (but that's all ego crap anyway isn't it?) - B and I moved the rest of our life into storage, gave our little town house key back, I took him to the airport, had lunch with my sister, wandered all over town grabbing last minute things for our travel, and just finished the rest of my final assessment and then emailed off ALL 10 ASSESSMENTS to my tutor!
This was a major goal of mine since the beginning of this subject. 10 assessments in 6 weeks. 10 BIG assessments. I've written more than 20,000 words. They weren't due today but I had decided there was no way I was taking them on holiday with me.
With a trip to the Sunny Coast for Easter, followed by a 2 month stint in Thailand and Burma at the end of the road... I had to give myself a kick up the bum to get them all done. And so thankful (and bloody exhausted) I am now as I can actually stop.
Stop - wow. That sounds really really nice.
And rest.
Put my feet up.
Pack all college books away.
Sleep.
Stare at the wall.
Meditate more.
Read anything my heart and being longs for - not just Pathophysiology and Biochemistry.
And in Thailand I'm going to get a massage everyday.
And to really rest, relax, rejuvenate, and allow my body and soul the time to heal.
It's long overdue. And the time is now.
I deserve it and so do you.
What do you want to do for yourself now that is long overdue? What have you kept pushing into the back of your thoughts and mind hoping it would disappear?
Your health? That excess weight? The argument you had with your best friend 4 months ago? That pesky chronic fatigue (that's trying to tell you something)?
Have a look at where you've been putting yourself last. I invite you to begin taking steps towards better health, a more beautiful life, and a better more beautiful you.

Short Cuts through Nutritional Medicine??
Well my first week of Nutritional Medicine is almost over and I LOVE IT! I've met some really nice people, the lecturers are all friendly and bubbly making the classes interesting and informative, and every little bit of my being is vibrating from the excitement of what I am learning (first week I kno... things will no doubt get tougher and harder, but this is what I EAT, LIVE and BREATHE so to finally be learning it in a classroom setting...).
It feels GREAT!

I've had to re-work my week though, compared to how it used to be. Three days a week I'm studying for 9hr days, plus travel time, study at home, gym sessions, yoga, runs, coaching, working at the health food shop AND preparing all my food - which can take anywhere from 1hr up to 3hrs per day!! Busy busy!
So I'm trying my best to try and cull the meal prep a bit - as the rest is all a little bit trickier (self confessed fitness junkie - don't dare try taking that away from me!!).
So, each night when I make my salad for dinner, I make enough for two, throwing a whole lot into my tupperware container for lunch the following day. Short cut numero uno.
I've also been making my brekkie smoothies the night before if I know I've got an early(er) start. Today I took 2 smoothies with me. One for brekkie and one for afternoon tea. I kept them in the freezer over night coz I was going to the gym at 530am and wouldn't be slurping on my smoothie til at least 8am. By then - perfect slushie and ice cold. As for afternoon tea - cold all day. Yum!
Snacks are ALWAYS in my bag; nuts, seeds, goji berries, dried apricots, medjool dates, whatever I'm feeling like. Perfect mid-arvo when I'm getting the munchies and want the cheeky snack whilst note taking.
And then my buckwheat crackers are also a great throw-in-the-bag-and-run type munchie. This arvo I spread a couple with barley miso and unhulled tahini; Don't knock it til you try it! It's a weird combo I know, and even weirder that it reminds me of VEGEMITE... But it's delicious! Give it a go (and let me know what you think)!
I'd love to get any extra suggestions you guys may have with organising your food. And I hope my suggestions help you - study or not, we all lead busy lives these days!

College, Cake, and Coconut Ice Cream
I'm on my break at work munching away on a big bowl of salad and thought "Hey! I could get a head start on my blog for tonight!" and so...
After 2weeks of feeling shit - emotionally, physically, spiritually - I can now say that I feel like I'm back on track and its feels FANTASTIC! I've got ENERGY, I've set GOALS, the SUN IN SHINING, and I feel on top of the world!
This weekend just gone I was at college again for the final Air and Fire components of our Medicine Wheel Life Quality and Design module.
But as promised, here's the coconut ice cream recipe I made last week.
1 cup cashews
1 1/2 cups water
1/3 cup agave syrup (but next time I wanna try yacon syrup and use less)
1 tsp vanilla
2 cups young coconut flesh (from 2-4 coconuts)
Blend it all, then add 1/4 cup melted coconut oil and blend it all again.
Taste! VITAL STEP ;) OMG!
Keep it in the fridge til super cold, then churn it through an ice cream maker.
I've just made another batch, and think I'm gonna add cacao nibs THROUGH it so its COCONUT-CHOC-CHIP! MMM!!!
I had some the other night with a chocolate brownie Maya kindly gave me, and sprinkled some cacao nibs and coconut flakes over the top. YUM!

Beginning the cleansing...
Happy Tuesday :) A little chilly but BEAUTIFUL weather nonetheless. How were your weekends?

I spent my entire weekend at college with the girls for another one of our intensive course modules titled "Life Quality and Design". Sounds good huh? Well it was.
The BEAUTIFUL picture above is of the Medicine Wheel we took time to create together as a class, with the theme of that day being WATER (Saturday was Earth and in a fortnight we look at Air and Fire). I LOVE going to college. My class is like a bunch of close-knit school girls that LAUGH, share, cry, LOVE and thoroughly enjoy one anothers company. I think collectivley we're all wondering what we're gonna do once it's all over!
So I had my notes ready, my bag packed and my prepared food all ready to go. A few of the things I snacked on included this CHOC-BERRY-BANANA smoothie I made for brekkie running out the door which was SOOOO YUMMY...
Bananas, blueberries, cacao, water, brazil nuts, maca, lucuma, protein powder, and lecithin
A BIG kale salad...
With tomatoes, pumpkin, broccoli, mushies and some beet-buckwheat crackers
And to keep me going during class I had my own nibble mix of pepeitas, sunflower seeds, goji berries and cacao beans... and later got a SPIRULINA FRUIT WHIP from the cafeteria. I had been reading again on spirulina and why it is so FANTASTIC but I'm not a huge fan of the taste of it - but ironically it's exactly what I felt like on Saturday morning. And so why waste a perfect opportunity to FEED my body with the stuff!
Monday at work (in the office) wasn't so great. I had some stuff come up for me over the weekend at college so I was feeling unlike my usual self emotionally, mentally and physically - but I was grateful that I made something different to look forward to at lunch time. My favourite spiced carrot soup, with some more beet-buckwheat crackers.

I later had a session with my coach which was INVALUABLE, and we spoke about what came up over the weekend. I also had my first ever French Nail Polish done on the walk over as I had time to kill, and felt like I needed some self-care. After a lifetime of nail biting, MSM had been AMAZING for my nails and now they are LONG! They look so beautiful :)
The past week gone, I feel that my eating is alot cleaner as I've gone off eating all DRIED FRUITS. It's been 7 days now and I plan on continuing for a whole month. Why? Well basically because I feel I eat too much of the stuff. I LOVE IT! But I also feel that cleaning and cleansing my system is of more importance right now, and that means no dried fruit.
In addition to that, I want to see for myself that I can actually live without it! Ha! It's enjoyment for me sure, but recently I've been munching away of a little too much more out of habit, and dried fruit is something that I have trouble stopping at one or two bits. My tongue still has a faint white coating hinting towards some candida and parasites of which I intrisically feel are present within me... and dried fruit would be doing absolutley nothing but helping those nasties THRIVE!
So I've put it out there. You're all holding me accountable. One month. No dried fruit. SO far so good. GREAT in fact!
And very shortly I'll be embarking on a JUICE FEAST for further cleansing. I'm really looking forward to it. Just doing all the planning now. I'll keep you posted :)
